When barbecuing Wagyu beef, due to the high marbling in the Wagyu, the fats will drip alot more onto the fire, thus causing more flame than necessary. Our suggestion is to place it over the fire for quick sear on the both sides than transfer the Wagyu beef away from the fire to cook using the heat only.
